tiene como objetivo analizar el efecto de las diferentes zonas climáticas de Europa sobre el
potencial productivo y contenido en proteína de diferentes variedades de cultivos proteicos.
Estos cultivos servirán como base para crear ingredientes y productos innovadores, nutritivos,
con propiedades saludables y sostenibles que formen parte de un sistema alimentario seguro.
En este contexto, el presente trabajo fin de master analiza la producción, el rendimiento y
calidad proteica de diferentes variedades de garbanzo (Cicer arietinum L) y quinoa
(Chenopodium quinoa) bajo condiciones de cultivo ecológico.
De entre las variedades estudiadas, la variedad de garbanzo Carmen y la variedad de quinoa
Puno son las que mejor resultado han demostrado en la zona climática mediterránea. El
rendimiento proteico de garbanzo es tres veces superior al de la quinoa. Sin embargo, la calidad
nutricional de la quinoa es superior, el pseudocereal presenta un 39% y un 56% más de
aminoácidos esenciales y totales respectivamente.
En general, tanto el garbanzo como la quinoa son candidatos para satisfacer la creciente
demanda del mercado en cuanto a proteína vegetal, garantizando el acceso global a dietas
saludables desde sistemas alimentarios sostenibles. [--]

INTIA participates in the Smart Protein project financed by the Horizon 2020 program to look for
the effects of different climatic zones of Europe on the yield and protein content of different
varieties of protein crops. These crops will be used to create ingredients and products which are
nutritious, trusted, environmentally friendly, and part of a secure and future-proofed supply
chain. In this context, the main objectives of this work are to analyze the yield and the protein
quality of different varieties of chickpea (Cicer arietinum L) and quinoa (Chenopodium quinoa)
under an organic farming system.
Among the varieties studied, the ones that gave the best results were the variety Carmen for
chickpea and the variety Puno for quinoa. The protein yield of chickpea is three times higher
than quinoa. However, the nutritional quality of quinoa is higher than chickpea, the
pseudocereal has 39% and 56% more of essential and total amino acids respectively.
Overall, chickpea and quinoa are attractive candidates to satisfy the growing demand for plant
protein production worldwide for food. [--]
