Apart from obtaining ethanol for alcoholic drinks, they have been used in human and animal feeding. Yeasts contain approximately 40% dry matter of proteins and they can tolerate and produce until 18%-20% (v/v) of ethanol. Nowadays, yeasts are the object of studies of unicells proteins production as well as many works about ethanol tolerance and fermentation.
