Abstract

Work experience is key to personal development. In the case of people with disabilities, both physical and intellectual, work plays a vitally important role in their social inclusion. The Undergraduate Project entitled " Central kitchen design as a special employment center", seeks to capture the technical and social training acquired during the degree. For this reason, a technical project is realized to design a central kitchen for collectivities with a maximum capacity of 4,000 daily menus. The company is designed with the aim of providing work to people with disabilities, both physical and intellectual. As a Special Employment Center, at least 70% of employees must be people with different skills. It explains the reasons why a center with these features is created and describes the jobs in the kitchen and the characteristics of each of them
