Ieregi Aramburu, Mikel Xabier2019-07-232019https://academica-e.unavarra.es/handle/2454/33666Ten honey samples from Navarre were analysed for quality physicochemical parameters, reducing sugar composition, colour, rheological properties and antioxidant profile (total phenolic content, flavonoid content and antioxidant activity). The aim of the study was to determine the quality value of the local honey so to increase its commercial value and to assess whether it is any difference between honeys of three climatic areas of the province. The parameters widely complied with the values established in the legislation, so it could be considered to include them in a quality denomination with stricter requirements. The honeys showed a Newtonian behaviour against shear stress. Bioactive content such as total phenolic compounds ranged between 26.01 to 86.84 mg GAE/kg.
