Over the past few years, the technology and applications of optical fibers have progressed very rapidly. In the field of sensing, the optical fiber has supposed huge advances regarding her predecessors. However, despite all those advances, we still have not manage to solve one of the biggest difficulties: Having multiple sensors in a single device without the inconvenience of having to connect them. With the purpose of finding a solution to this problem, the idea of creating several sensors in a single fiber arose. In order to meet this objective, the Polytechnic University of Valencia has managed to find the suitable technique to write different grating structures onto the cores of multicore optical fibers, Fig. 1. Once we have optical multicore fibers, with different grating structures written on their cores, our task is to find the way to obtain coatings with different refractive indexes to cover partially the fibers. This thesis brings together two novelties in the field of fiber optic sensors. In the one hand, the technique that the researchers of the Polytechnic University of Valencia have found in order to write different grating structures onto the cores of the multicore optical fiber has been used in a few of works, and there is no too much written about it. In the other hand, the idea of creating partially coated multicore fibers is a completely novel approach and fulfilling all the objectives presented above we could demonstrate a totally new way of obtaining multiple sensors in a unique multicore fiber.
