Efecto de la aplicación de atmosferas modificadas en la capacidad antioxidante de arazá (Eugenia stipitata McVaugh), naranjilla (Solanum quitoense Lam.) y tomate de árbol (Solanum betaceum Cav.)

Resumen
Por su exquisito aroma y sabor, el arazá, naranjilla y tomate de árbol tienen un
alto potencial de crecimiento en el mercado internacional. Para
mantener su
calidad, se emplearon tratamientos con atmósferas modificadas (AM) por ser
efectivos para conservar fruta fresca. Sin embargo, se desconoce su efecto
sobre la capacidad antioxidante (CA).

Por su exquisito aroma y sabor, el arazá, naranjilla y tomate de árbol tienen un
alto potencial de crecimiento en el mercado internacional. Para
mantener su
calidad, se emplearon tratamientos con atmósferas modificadas (AM) por ser
efectivos para conservar fruta fresca. Sin embargo, se desconoce su efecto
sobre la capacidad antioxidante (CA).
A partir de trabajos previos se escogieron las combinaciones gaseosas que
mantuvieron de mejor manera los antioxidantes de estas frutas:
en tomate de
árbol 2,5/2,5% y 80/10% O2/CO2
y en arazá y naranjilla 2,5/5,0% O2/CO2. En
estas cuatro muestras posteriormente se determinó la CA por ABTS y DPPH.
En ABTS se observó los valores más altos de CA respecto al DPPH. La
capacidad antioxidante (ABTS y DPPH) del arazá estuvo correlacionada con su
contenido de flavonoides (r> 0,8360) y polifenoles (r>0,7252).
En naranjilla
(r>0,8188) y el tomate de árbol 2,5/2,5% O2/CO2
(r>0,7365) los polifenoles y
flavonoides presentaron correlaciones significativas con el DPPH. Por el
contrario, el tomate de árbol 80/10% O2/CO2
mostró una mejor correlación
(r>0,7259) con la CA medida por ABTS.
A partir de un análisis de correlación canónica se pudo observar que los el
contenido de polifenoles totales es el responsable de la CA de
las tres frutas,
mostrando correlaciones fuertes (0,9716) con la CA medida por DPPH.
Finalmente se pudo observar que los tratamientos con AM permiten mantener la
CA de las tres frutas hasta el décimo día de ensayo, dentro de
los valores
obtenidos por otros autores. [--]

From previous work, the gaseous combinations that best maintained the
antioxidants of these fruits were chosen: in tamarillo 2,5/2,5%
and 80/10% O2/ CO2
and in arazá and naranjilla 2,5/5,0% O2/CO2. In these four samples the CA
was later determined by ABTS and DPPH methods.
In ABTS, the highest CA values were observed with respect to DPPH. The
antioxidant capacity (ABTS and DPPH) of the arazá was correlated with flavonoid

was obtained by other
