| es_ES |
dc.description.abstract | For the exquisite aroma and flavor, the arazá, naranjilla and tamarillo have a high growth potential in the international market. To maintain its quality, treatments with modified atmospheres (AM) were used because it is effective in preserving fresh fruit. However, the effect on antioxidant capacity (CA) is unknown. From previous work, the gaseous combinations that best maintained the antioxidants of these fruits were chosen: in tamarillo 2,5/2,5% and 80/10% O2/ CO2 and in arazá and naranjilla 2,5/5,0% O2/CO2. In these four samples the CA was later determined by ABTS and DPPH methods. In ABTS, the highest CA values were observed with respect to DPPH. The antioxidant capacity (ABTS and DPPH) of the arazá was correlated with flavonoid (r> 0,8360) and polyphenols (r> 0,7252) contents. In naranjilla (r> 0,8188) and tamarillo 2,5/ 2,5% O2 / CO2 (r> 0,7365) polyphenols and flavonoids showed significant correlations with DPPH. In contrast, the tamarillo 80/10% O2/CO2 showed a better correlation (r> 0,7259) with the CA measured by ABTS. From a canonical correlation analysis it was observed that the polyphenols are the antioxidants responsible for the CA of the three fruits, showing strong correlations (0.9716) with the CA measured by DPPH. Finally, it was observed that the treatments with AM allow main taining the CA of the three fruits until the 10 days of analisys, similar values was obtained by other authors. | es_ES |
