Desde las áreas de Producción Animal de las Escuelas de Ingenieros Agrónomos de la Universidad Pública de Navarra y de la Universidad Politécnica de Madrid, se llevan organizando desde el año 1.999, las "Jornadas sobre Ganado de Lidia", que se celebran cada dos años en la Escuela Técnica Superior de Ingenieros Agrónomos de la Universidad Pública de Navarra (Pamplona). La necesidad de integrar este tipo de explotación en nuevos horizontes productivos y zootécnicos y la búsqueda de una mayor rentabilidad, exigen reflexionar sobre las diferentes posibilidades que ofrece el desarrollo integral del ganado de lidia.

Size and number variation of adipocytes during the growth of Rasa Aragonesa lambs

The size and number of adipocytes of different fat depots was studied in 45 male lambs of the Rasa Aragonesa breed, distributed in three groups of 15 lambs (G12, G24, G36), slaughtered respectively at 11.7 ± 0.67,24.5 ± 0.57 and 35.8 ± 1.74 kg live weight (LW) and at an age of 32 ± 5, 89 ± 8 and 123 ± 8 days. G12 lambs were slaughtered on the day of weaning, G24 and G36 lambs were weaned respectively at 16.2 ± 1.32 and 18.3 ± 2.46 kg LW and were fed from then onwards on concentrated fodder and barley straw ad libitum until they were slaughtered. The results obtained show that there is a significant increase in the amount of fat deposited in three internal (omental, mesenteric and kidney knob and channel) fat depots as the LW at slaughter increases (P<0.01). A similar phenomenon occurs in the size of the adipocytes, hypertrophy being more evident between 24 and 36 kg (P<0.01) than between 12 and 24 kg, except in the intermuscular fat depot, where the differences were between the two most extreme weight(P <0.01). The number of adipocytes in the omental and mesenteric fat depots increased significantly during the period of the study (P<0.01) while no variation occurred in the kidney knob and channel fat depot during the same period.

En el presente trabajo se comparan terneros de raza Retinta en pureza y cruzados con dos razas de aptitud cárnica más mejoradas, la Limusín y la Pirenaica, con la finalidad de profundizar en el conocimiento de los parámetros de conformación y engrasamiento que muestran estos genotipos cruzados.

Insistir en la suerte de varas

La suerte de varas se sigue haciendo mal en casi todas las corridas de casi todas las plazas de España. Es un gran fracaso de la tauromaquia actual. Y más, cuando la suerte de varas es la responsable máxima de que naciera y de que se mantenga el ganado bravo en España, pues es con la puya con la que se ha podido seleccionar la bravura del ganado en los tentaderos y medir la bravura de los toros en el ruedo.

Uno de los mayores problemas que tiene la Fiesta de los toros en estos momentos se encuentra en la falta de bravura y de casta del toro actual. La recuperación de la bravura verdadera y el equilibrio entre los diferentes tercios de la lidia es absolutamente indispensable para salvaguardar la Tauromaquia.

Distribution patterns of infection with multiple types of human papillomaviruses and their association with risk factors

Background: Infection with multiple types of human papillomavirus (HPV) is one of the main risk factors associated with the development of cervical lesions. In this study, cervical samples collected from 1, 810 women with diverse sociocultural backgrounds, who attended to their cervical screening program in different geographical regions of Colombia, were examined for the presence of cervical lesions and HPV by Papanicolau testing and DNA PCR detection, respectively. Principal Findings: The negative binomial distribution model used in this study showed differences between the observed and expected values within some risk factor categories analyzed. Particularly in the case of single infection and coinfection with more than 4 HPV types, observed frequencies were smaller than expected, while the number of women infected with 2 to 4 viral types were higher than expected. Data analysis according to a negative binomial regression showed an increase in the risk of acquiring more HPV types in women who were of indigenous ethnicity (+37.8%), while this risk decreased in women who had given birth more than 4 times (-31.1%), or were of mestizo (-24.6%) or black (-40.9%) ethnicity. Conclusions: According to a theoretical probability distribution, the observed number of women having either a single infection or more than 4 viral types was smaller than expected, while for those infected with 2-4 HPV types it was larger than expected. Taking into account that this study showed a higher HPV coinfection rate in the indigenous ethnicity, the role of underlying factors should be assessed in detail in future studies.

Shelf life of ground beef enriched with omega-3 and/or conjugated linoleic acid and use of grape seed extract to inhibit lipid oxidation

The shelf life and oxidative stability of refrigerated raw ground beef enriched with omega-3 and/or conjugated linoleic acid (CLA) were studied. Grape seed extract (GSE) was used to inhibit lipid oxidation in the ground beef. Eight treatments of ground beef were established according to the enrichment of beef (control, enriched with omega-3, with CLA, or with omega-3 plus CLA) and the use of GSE (0 and 250 mg GSE/kg product). Fresh beef was ground and mixed with GSE and salt. Treatments of beef were stored at 2± 1°C in aerobic packaging for 0, 1, 3, and 6 days under retail display conditions. Oxidation stability (thiobarbituric acid-reactive substances [TBARS]), pH, instrumental color, metmyoglobin formation, and sensory attributes (color and odor) were measured. Omega-3-enriched beef increased the oxidation level at day 6 as determined by TBARS (P<0.05), but the instrumental color was not affected. The enrichment of CLA improved the coordinates of color (P<0.05) until day 3 and decreased the oxidation at day 6 (P<0.05). There were no differences in color and odor values among the types of beef during display, except at day 3, when CLA treatments had the highest scores. Addition of GSE decreased the oxidation level (P<0.001) and did not affect the instrumental color or the sensory parameters.

Caracterización de las 'Costillas de Palo' de cordero de raza Navarra. I. Composición tisular

Se ha estudiado la composición tisular de 46 costillas de palo (10ª y 11ª) procedentes de 23 corderos de raza Navarra sacrificados con 24,2±1,55Kg. de peso vivo y 98±6,3d de edad. El peso medio de la costilla fue de 78,4±10,82g, de los que el porcentaje de músculo supuso el 48,5±4,16%, el de grasa 29,3±4,78% y el de hueso 15,0±3,19%, respectivamente. El músculo Longissimus dorsi, que presentó un área media de 9,6±1,34cm2, supuso el 52,4±6,30% del músculo total de la costilla. El componente óseo se distribuyó en un 41,8% en la costilla y el 58,2% en la vertebra. La grasa subcutánea supuso el 50,1% de la grasa total diseccionada, correspondiendo el 49,9% restante a la intermuscular. Por último, se midió la grasa intramuscular o de veteado que presentaba el músculo Longissimus dorsi, ocupando dicha grasa un 2,5±0,98% de la superficie de dicho músculo. El número medio de vetas de grasa en cada costilla fue de 5,6±1,92 y el tamaño medio de éstas de 4,5±1,74mm2.
