En el presente estudio se han realizado ensayos de deshidratación de diferentes frutas
mediante dos métodos, método convencional por convección de aire caliente y por microondas,
y se ha analizado el efecto del método de secado en las propiedades sensoriales de las frutas

En el presente estudio se han realizado ensayos de deshidratación de diferentes frutas
mediante dos métodos, método convencional por convección de aire caliente y por microondas,
y se ha analizado el efecto del método de secado en las propiedades sensoriales de las frutas
(color, textura, sabor, etc.) así como en el consumo energético del proceso.
En base a los resultados obtenidos en el ensayo, se observa una reducción en los tiempos de
proceso de deshidratación por microondas frente a los tiempos del proceso de secado por aire
caliente. Mediante el análisis de curvas de velocidad, se observó que las frutas deshidratadas
mediante microondas mostraban un periodo de secado constante al inicio del proceso,
relacionado con el gradiente de presión de vapor generada en la parte interna del alimento, y que
no se aprecia en las curvas correspondientes al secado por aire caliente, donde se observa una
velocidad de secado decreciente a lo largo del proceso.
Los resultados permiten concluir que el método de secado por microondas supone ahorros
de entre el 53,99 y el 89,41% en el consumo energético del proceso completo en comparación
con el método convencional. Además, el método de deshidratación no influye por lo general en
la calidad sensorial de las frutas, salvo en el color, donde existen niveles de diferencia
suficientes para ser perceptibles a simple vista, y en aspecto general, ya que las frutas tienen
tendencia a presentar quemaduras tras la deshidratación por microondas. [--]

In the present study, fruit dehydration tests for different fruits have been carried out by two
different methods, conventional air drying method and another one based on the use of
microwaves. The effect of the drying method on the sensory properties of fruits has been
analysed (color, texture, flavour, etc.) as well as the energy consumption for the entire process.
Based on the results obtained in the study, it was observed a reduction in the time needed for
drying fruit using microwave method instead of air drying. Through the analysis of drying
curves and drying speed curves, it was observed that microwave dried fruits showed a period of
constant drying at the beginning of the process, which could be related to the vapor pressure
gradient generated in the internal part of the fruit. This is not observed in the hot air drying
curves where a decreasing drying speed is observed throughout the process.
The data obtained in the study allow to conclude that the use of microwaves for drying of fruit
could result in savings of between 53.22 and 89.41% for energy consumption for the whole
process duration compared to the conventional method. In addition, the sensory quality of the
fruit is not influenced by the drying method for most of the fruits and sensory parameters,
except for color, where ∆E values show a perceptible difference at first sight for the color on
different drying methods, and global aspect since fruit have a tendency to burn after microwave
