    Evaluation of different nutritional sources in lactic acid bacteria fermentation for sustainable postbiotic production

    In recent years, interest in postbiotics has grown due to their potential health benefits and applications in food systems. This study evaluated various nutritional sources for lactic acid bacteria (LAB) fermentation to enhance postbiotic production. Three LAB strains were tested: Pediococcus acidilactici CECT 9879 (PA), Weissella cibaria CECT 30731 (WC), and Lactococcus lactis CECT 30734 (LL). Fermentation experiments assessed bacterial growth, pH levels, and antibacterial activity against E. coli using different carbon and nitrogen sources. Fructose and xylose significantly improved growth in WC (9.39 ± 0.16 log CFU/mL) and LL (9.37 ± 0.22 log CFU/mL) compared to glucose. Ribose enhanced antimicrobial activity in PA (41.67 ± 2.89%) and WC (50.00 ± 0.00%) relative to glucose. Additionally, plant-based nitrogen sources, such as soy (LL: 8.93 ± 0.12 log CFU/mL and 81.67 ± 2.89%) and wheat (WC: 9.40 ± 0.17 log CFU/mL and 65.00 ± 0.00%), along with microbial sources like yeast (PA: 9.57 ± 0.12 log CFU/mL and 40.00 ± 0.00%), effectively supported growth and antibacterial activity. These findings highlight the potential of developing animal-free fermentation media that meet nutritional, safety, and sustainability criteria while making a significant contribution to the optimization of postbiotic production.

    Effects of ozonation on the physicochemical properties and antimicrobial activity of virgin and pomace olive oils

    Ozonated olive oils are recognized for their remarkable antimicrobial properties. The reaction between ozone (O3) and unsaturated fatty acids leads to the formation of bactericidal compounds (ozonides, aldehydes, and peroxides) with valuable applications. This study represents the first comprehensive investigation into the effects of a wide range of ozone exposure durations (from 0 to 48 h) on the physicochemical properties and antimicrobial activity of both virgin olive oil (VOO) and pomace olive oil (POO), along with a thorough statistical analysis of the correlation between ozone dose and these parameters. The physicochemical indicators, including fatty acid methyl ester (FAME) composition, peroxide index, acidity index, iodine value, and viscosity, were measured at ozonation doses ranging from 0 to 1 mol O3. Significant changes were observed with increasing ozonation time, including a 69% and 46% reduction in oleic acid content, as well as increased peroxide values of 1255.2 mEq O₂/kg and 1878.8 mEq O₂/kg for VOO and POO, respectively. Antimicrobial activity was evaluated against Escherichia coli (STCC 45), Pseudomonas aeruginosa (STCC 109), and Staphylococcus aureus (STCC 239), with the highest inhibition observed against S. aureus (22.68 mm with POO at 48 h and 1 mol O3). PCA analysis identified three groups: low ozone doses (0–0.08 mol O₃) associated with higher iodine values; intermediate doses (0.16–0.5 mol O₃) linked to increased peroxide, acidity, viscosity, and antimicrobial activity; while high doses (1 mol O₃) provided no further benefits, suggesting that moderate doses are sufficient for effective antimicrobial activity. These findings highlight the potential of ozonated olive oils for novel applications in the food industry.

    Effect of PUFAs-ω3 and ω6 on oxidative stress of sheep erythrocytes

    Background: In recent years, the use of long-chain polyunsaturated fatty acids (PUFA) ω3 and ω6, as food supplements in livestock has increased due to their beneficial properties related to their antioxidant activity. It has been demonstrated however that a high intake of these substances has prooxidant and cell-damaging effects, especially if their circulating concentrations are unbalanced. Starting from these premises, and taking advantage of previous findings, the present study aimed at defining the optimal circulating concentrations and PUFAs ω3/ω6 ratio, to ensure the antioxidant/oxidant balance in sheep RBCs. Results: All tested concentrations (25–300 µg/mL in PBS) of PUFAs-ω3 after 4 h of treatment on sheep RBCs, showed antioxidant properties with a significant decrease in reactive oxygen species (ROS) versus the control group (CTRL) (p < 0.05). Furthermore, ω6 showed an antioxidant effect at low concentrations (25–200 g/mL) but a pro-oxidant effect at the highest concentrations (250 and 300 µg/mL) with a significant increase in ROS production (123.6 ± 2.1 and 131.4 ± 6.5% sloope RFU of CTRL respectively p < 0,001), malondialdehyde (MDA) (p < 0.01), and haemolysis (p < 0.01) versus CTRL group (1.1 ± 0.1%), and, also with a decrease of Trolox equivalent antioxidant capacity (TEAC) (p < 0,05). The ratio ω3/ω6 of 1:10 (25/250 µg/mL) and 1:4 (25/100 µg/mL) showed an intracellular ROS level like the CTRL group whereas, the ratio 1:2 (100/200 µg/mL) resulted in a significant decrease in ROS production (62.71 ± 2.31% slope RFU of CTRL, p < 0.001) and MDA (p < 0.001), with an increase in TEAC (p < 0.05), and a decrease haemolysis versus the control group (p < 0,01). Conclusions: Our results showed that a beneficial effect on the oxidative state of sheep RBCs was obtained with in vitro administration of low concentrations of ω6 and with all tested concentrations of ω3. The addition of ω6 at high concentrations leads to an imbalance in the PUFA ω3/ω6 ratio, compromising the oxidative state and viability of the RBCs. The maximum antioxidative effect was found at ω3/ω6 ratio 1:2).

    Background & aims: time-restricted eating (TRE) shows promise for weight loss and improving menopauserelated body composition and cardiometabolic health, but its effects on skeletal muscle tissue (SMT) in postmenopausal women are unknown. This study investigates the effects of three weight loss interventions over 12 weeks on SMT quantity, quality, function, and cardiometabolic health in postmenopausal women with overweight/obesity, with effects persistence evaluated at a 12-month follow-up. Methods and results: in this randomized controlled trial, 78 postmenopausal women (50–65 years; BMI 25–40 kg/m2; sedentary lifestyle; eating window ≥12 h/day; no severe metabolic impairments) will be recruited. Participants will be randomly assigned to one of three groups for 12 weeks: TRE, TRE + resistance training, or CR + resistance training. The TRE groups will reduce their eating window to 8 h and receive nutritional advice to adhere to a Mediterranean diet. The CR group will follow a personalized hypocaloric diet (− 500 kcal/day). Resistance training groups will perform supervised resistance training 3 times/week. Primary Outcome: Change in SMT quantity measured by MRI at baseline and after 12 weeks. Secondary Outcomes: intermuscular adipose tissue (IMAT), strength, power, body weight and composition, and cardiometabolic risk factors. Conclusion: this study will illustrate the effects of TRE and TRE combined with resistance exercise compared with the currently recommended obesity-lifestyle treatment on SMT quantity, quality, function, and cardiometabolic markers. The results will offer insights into dietary strategies to combat obesity and metabolic diseases without increasing sarcopenia risk in postmenopausal women, a sparsely studied and particularly affected population.

    La necesidad de dirigirnos hacia unas dietas y sistemas alimentarios más sostenibles es indiscutible. No obstante, no es una tarea fácil. Hace falta una visión holística para considerar todos los factores implicados. El sistema alimentario es uno de los principales sectores responsables de la degradación ambiental. En la actualidad, es el mayor usuario de agua dulce a nivel mundial: la agricultura representa el 70 % del agua dulce extraída en el mundo. La agricultura también es responsable de entre el 21 % y el 37 % de las emisiones totales de gases de efecto invernadero (GEI). Además, ocupa aproximadamente entre el 49 % y el 51 % de la superficie terrestre libre de hielo del mundo. Las tierras de pastoreo representan el 37 % y los campos de cultivo representan aproximadamente el 12-14 %. Las prácticas agrícolas intensivas e insostenibles y la contaminación también pueden desencadenar la pérdida de biodiversidad.

    New insights from GWAS on BMI-related growth traits in a longitudinal cohort of admixed children with Native American and European ancestry

    Body-mass index (BMI) is a hallmark of adiposity. In contrast with adulthood, the genetic architecture of BMI during childhood is poorly understood. The few genome-wide association studies (GWAS) on children have been performed almost exclusively in Europeans and at single ages. We performed cross-sectional and longitudinal GWAS for BMI-related traits on 904 admixed children with mostly Mapuche Native American and European ancestries. We found regulatory variants of the immune gene HLA-DQB3 strongly associated with BMI at 1:5 2:5 years old. A variant in the sex-determining gene DMRT1 was associated with the age at adiposity rebound (Age-AR) in girls (P = 9:8 3 10 9). BMI was significantly higher in Mapuche than in Europeans between 5.5 and 16.5 years old. Finally, Age-AR was significantly lower (P = 0:004) by 1.94 years and BMI at AR was significantly higher (P = 0:04) by 1.2 kg/m2, in Mapuche children compared with Europeans.

    Differential methylation pattern in pubertal girls associated with biochemical premature adrenarche

    Biochemical premature adrenarche is defined by elevated serum DHEAS [≥40 μg/dL] before age 8 y in girls. This condition is receiving more attention due to its association with obesity, hyperinsulinemia, dyslipidemia, and polycystic ovary syndrome. Nevertheless, the link between early androgen excess and these risk factors remains unknown. Epigenetic modifications, and specifically DNA methylation, have been associated with the initiation and progression of numerous disorders, including obesity and insulin resistance. The aim of this study was to determine if prepubertal androgen exposure is associated with a different methylation profile in pubertal girls. Eighty-six healthy girls were studied. At age 7 y, anthropometric measurements were begun and DHEAS levels were determined. Girls were classified into Low DHEAS (LD) [<42 μg/dL] and High DHEAS (HD) [≥42 μg/dL] groups. At Tanner stages 2 and 4 a DNA methylation microarray was performed to identify differentially methylated CpG positions (DMPs) between HD and LD groups. We observed a differential methylation pattern between pubertal girls with and without biochemical PA. Moreover, a set of DNA methylation markers, selected by the LASSO method, successfully distinguished between HD and LD girls regardless of Tanner stage. Additionally, a subset of these markers were significantly associated with glucose-related measures such as insulin level, HOMA-IR, and glycaemia. This pilot study provides evidence consistent with the hypothesis that high DHEAS concentration, or its hormonally active metabolites, may induce a unique blood methylation signature in pubertal girls, and that this methylation pattern is associated with altered glucose metabolism.

    Circulating citric acid cycle metabolites and risk of cardiovascular disease in the PREDIMED study

    Background and aim: Plasma citric acid cycle (CAC) metabolites might be likely related to cardiovascular disease (CVD). However, studies assessing the longitudinal associations between circulating CAC-related metabolites and CVD risk are lacking. The aim of this study was to evaluate the association of baseline and 1-year levels of plasma CAC-related metabolites with CVD incidence (a composite of myocardial infarction, stroke or cardiovascular death), and their interaction with Mediterranean diet interventions. Methods and results: Case-cohort study from the PREDIMED trial involving participants aged 55¿80 years at high cardiovascular risk, allocated to MedDiets or control diet. A subcohort of 791 participants was selected at baseline, and a total of 231 cases were identified after a median follow-up of 4.8 years. Nine plasma CAC-related metabolites (pyruvate, lactate, citrate, aconitate, isocitrate, 2-hydroxyglutarate, fumarate, malate and succinate) were measured using liquid chromatography-tandem mass spectrometry. Weighted Cox multiple regression was used to calculate hazard ratios (HRs). Baseline fasting plasma levels of 3 metabolites were associated with higher CVD risk, with HRs (for each standard deviation, 1-SD) of 1.46 (95%CI:1.20¿1.78) for 2-hydroxyglutarate, 1.33 (95%CI:1.12-1.58) for fumarate and 1.47 (95%CI:1.21¿1.78) for malate (p of linear trend <0.001 for all). A higher risk of CVD was also found for a 1-SD increment of a combined score of these 3 metabolites (HR = 1.60; 95%CI: 1.32-1.94, p trend <0.001). This result was replicated using plasma measurements after one-year. No interactions were detected with the nutritional intervention. Conclusion: Plasma 2-hydroxyglutarate, fumarate and malate levels were prospectively associated with increased cardiovascular risk.

    Plasma insulin-like growth factor-II (IGF-II) and IGF-II/IGF-I ratio in a Chilean case of Doege-Potter syndrome

    Introducción: el síndrome de Doege-Potter es una rara entidad clínica caracterizada por eventos hipoglicémicos recurrentes causados por tumores no-pancreáticos que secretan una forma incompletamente procesada con alto peso molecular del factor de crecimiento similar a la insulina-II (IGF-II). Objetivo: reportar los niveles circulantes de IGF-II e IGF-I en un caso chileno de síndrome de Doege-Potter y en controles, así como identificar la forma de alto peso molecular de IGF-II. Métodos: los niveles plasmáticos de IGF-II e IGF-I se determinaron mediante inmunoensayos de tipo ELISA en el caso índice y en 10 controles. La forma de alto peso molecular de IGF-II se identificó mediante western-blot. Resultados: la concentración plasmática de IGF-II en el paciente fue de 868,9 ng/mL, que es sólo ligeramente superior al percentil 80 del grupo control (681,4 ± 212,8 ng/mL; media ± desviación estándar). Sin embargo, la concentración plasmática de IGF-I en el paciente fue de 17,6 ng/ mL, que es notoriamente inferior a la de los controles (109,1 ± 19,1 ng/mL). La razón IGF-II/IGF-I en el paciente fue de 49,4 (valor normal < 10), que es 7,8 veces superior a la media de los controles (6,3 ± 1,5). La presencia de la forma de alto peso molecular de IGF-II se confirmó mediante western-blot. Conclusiones: la razón IGF-II/IGF-I en plasma es un mejor indicador de las alteraciones metabólicas del síndrome de Doege-Potter que las mediciones aisladas de IGF-II o IGF-I circulantes.

    Relation between body composition trajectories from childhood to adolescence and nonalcoholic fatty liver disease risk

    NAFLD has become the leading cause of chronic liver disease in children, as a direct consequence of the high prevalence of childhood obesity. This study aimed to characterize body composition trajectories from childhood to adolescence and their association with the risk of developing nonalcoholic fatty liver disease (NAFLD) during adolescence. The participants were part of the 'Chilean Growth and Obesity Cohort Study', comprising 784 children who were followed prospectively from age 3 years. Annual assessments of nutritional status and body composition were conducted, with ultrasound screening for NAFLD during adolescence revealing a 9.8% prevalence. Higher waist circumference measures were associated with NAFLD from age 3 years (p = 0.03), all skin folds from age 4 years (p < 0.01), and DXA body fat measurements from age 12 years (p = 0.01). The fat-free mass index was higher in females (p = 0.006) but not in males (p = 0.211). The second and third tertiles of the fat mass index (FMI) had odds ratios for NAFLD during adolescence of 2.19 (1.48-3.25, 95% CI) and 6.94 (4.79-10.04, 95% CI), respectively. Elevated waist circumference, skin folds, and total body fat were identified as risk factors for future NAFLD development. A higher FMI during childhood was associated with an increased risk of NAFLD during adolescence.

    Genetic determinants of serum bilirubin using inferred native American gene variants in Chilean adolescents

    Gene variants in the UGT1A1 gene are strongly associated with circulating bilirubin levels in several populations, as well as other variants of modest effect across the genome. However, the effects of such variants are unknown regarding the Native American ancestry of the admixed Latino population. Our objective was to assess the Native American genetic determinants of serum bilirubin in Chilean admixed adolescents using the local ancestry deconvolution approach. We measured total serum bilirubin levels in 707 adolescents of the Chilean Growth and Obesity Cohort Study (GOCS) and performed high-density genotyping using the Illumina-MEGA array (>1.7 million genotypes). We constructed a local ancestry reference panel with participants from the 1000 Genomes Project, the Human Genome Diversity Project, and our GOCS cohort. Then, we inferred and isolated haplotype tracts of Native American, European, or African origin to perform genome-wide association studies. In the whole cohort, the rs887829 variant and others near UGT1A1 were the unique signals achieving genome-wide statistical significance (b = 0.30; p = 3.34 × 10-57). After applying deconvolution methods, we found that significance is also maintained in Native American (b = 0.35; p = 3.29 × 10-17) and European (b = 0.28; p = 1.14 × 10-23) ancestry components. The rs887829 variant explained a higher percentage of the variance of bilirubin in the Native American (37.6%) compared to European ancestry (28.4%). In Native American ancestry, carriers of the TT genotype of this variant averaged 4-fold higher bilirubinemia compared to the CC genotype (p = 2.82 × 10-12). We showed for the first time that UGT1A1 variants are the primary determinant of bilirubin levels in Native American ancestry, confirming its pan-ethnic relevance. Our study illustrates the general value of the local ancestry deconvolution approach to assessing isolated ancestry effects in admixed populations.

    Considerations for familial chylomicronemia diagnosis in the era of next-generation sequencing: a Latin American perspective

    Familial chylomicronemia syndrome (FCS) is an autosomal recessive disorder, characterized by alterations in the catabolism of chylomicrons and by increased levels of plasma triglycerides. It has been shown that about 60-90% of FCS patients have biallelic mutations in the LPL gene and the remaining patients have mutations in genes encoding proteins closely related to LPL function. The objective of this manuscript is to illustrate the different clinical scenarios of FCS presentation, and to guide practitioners on the usefulness of genetic tests in each of them. To this end, several published papers about recommendations for the diagnosis of FCS are discussed briefly, in addition to the presentation of several hypothetical cases, highlighting different clinical presentations and possible associated genetic findings. These cases illustrate the multiplicity of potential aspects of family history, clinical manifestations, biochemical parameters, and patterns of genetic variants found in genomic analyses of FCS.

    Association between plasma leptin/adiponectin ratio and insulin resistance indexes in prepubertal children

    Objective: To assess the association between leptin/adiponectin ratio (LAR) and insulin resistance surrogates in prepubertal children. Subjects and methods: Study based on data from the Growth and Obesity Chilean Cohort Study (GOCS) involving 968 Chilean prepubertal children. Plasma insulin, leptin, and adiponectin were determined by immunoassays. Several common insulin resistance surrogates were calculated, including the homeostasis model assessment of insulin resistance (HOMA-IR), triglyceride/HDL cholesterol index, triglyceride-glucose (TyG) index, and the TyG index corrected for body mass index (BMI; TyG-BMI) and waist circumference (WC; TyG-WC). Associations among variables were assessed using multiple linear and logistic regression analysis. Results: There was a significant direct association between plasma leptin and LAR with BMI z-score but no association between plasma adiponectin and adiposity. After adjustments for sex and age, LAR was significantly associated with all insulin resistance surrogates (which were categorized using the 75th percentile as the cutoff point), with the TyG-WC index emerging as the surrogate with the highest magnitude of association (odds ratio [OR] 2.44, 95% confidence interval [CI] 2.05-2.9). After additional adjustment for BMI z-score, only the association between LAR and TyG-WC remained significant (OR 1.64, 95% CI 1.27-2.12). Conclusion: Plasma leptin and LAR were strongly associated with several common insulin resistance surrogates in prepubertal children, most notably with the TyG-WC index. Associations between LAR and insulin resistance indexes were mainly driven by the effect of plasma leptin, which is also directly associated with increased adiposity.

    Case Report: Concurrent de novo pathogenic variants in the LMNA gene as a cause of sporadic partial lipodystrophy

    Introduction: Inherited lipodystrophies are a group of rare diseases defined by severe reduction in adipose tissue mass and classified as generalized or partial. We report a non-familial (sporadic) case of partial lipodystrophy caused by a novel genetic mechanism involving closely linked de novo pathogenic variants in the LMNA gene. Methods: A female adult with partial lipodystrophy and her parents were evaluated for gene variants across the exome under different mendelian inheritance models (autosomal dominant, recessive, compound heterozygous, and X-linked) to find pathogenic variants. Body composition was assessed via dual-energy X-ray absorptiometry (DXA). Results: The patient showed absence of adipose tissue in the limbs; preservation of adiposity in the face, neck, and trunk; muscular hypertrophy, hypertriglyceridemia and insulin resistance. DXA revealed a fat mass of 15.4%, with android-to-gynoid ratio, trunk/limb, and trunk/leg ratios exceeding the published upper limits of 90% reference intervals. Two heterozygous missense de novo pathogenic variants in cis within the LMNA gene were found in the proband: p.Y481H and p.K486N (NP_733821.1). These variants have functional effects and were reported in inherited Emery-Dreifuss muscular dystrophy 2 (p.Y481H) and familial partial lipodystrophy type 2 (p.K486N). Molecular modeling analyses provided additional insights into the protein instability conferred by these variants in the lamin A/C Ig-like domain. Conclusion: In a case of sporadic partial lipodystrophy, we describe two concurrent de novo pathogenic variants within the same gene (LMNA) as a novel pathogenic mechanism. This finding expands the genetic and phenotypic spectrum of partial lipodystrophy and laminopathy syndromes.

    Changes in the quality parameters and antimicrobial activity of ozonated virgin and pomace olive oils under different storage conditions

    Ozonated olive oils have emerged as a promising alternative for natural antimicrobial agents in the food industry due to their potential to inhibit microbial growth. However, the stability and effectiveness of these oils under different storage conditions has not been thoroughly explored. This study examines the changes in the physicochemical properties and antimicrobial activity of ozonated virgin olive oil (VOO) and pomace olive oil (POO), stored at 4 ◦C and 20 ◦C for 6 months. The peroxide index (PI), acidity index (AI), iodine value (IV), and viscosity (V) were analyzed, along with their antimicrobial activity against Escherichia coli (STCC 45), Pseudomonas aeruginosa (STCC109), and Staphylococcus aureus (STCC 239). The results showed that both oils underwent changes in their physicochemical properties and antimicrobial activity over time. The PI initially increased up to day 30, with VOO reaching a peak value of 741.44 ± 32.16 meq O2/kg and POO reaching 1067.23 ± 56.56 meq O2/kg, but after this point, it began to decrease in both oils and at both temperatures (4 ◦C and 20 ◦C). The acidity index (AI) increased over time, particularly in POO, which reached a final value of 6.32 ± 0.14 mg KOH/g. Both oils showed a reduction in iodine value (IV), and an increase in viscosity (V) over time. In terms of antimicrobial activity, P. aeruginosa remained stable with an average inhibition zone of 9.41 ± 0.23 mm, while E. coli showed the greatest increase in activity over time, reaching 21.31 ± 4.01 mm in POO at 20 ◦C. On the other hand, S. aureus exhibited the highest average antimicrobial activity, with a mean inhibition diameter of 14.49 ± 0.36 mm, and the largest inhibition zone of Ø = 18.97 ± 1.46 mm observed after 180 days of storage. A Spearman correlation analysis revealed a strong positive relationship (ρ > 0.85, p < 0.05) among PI, AI, and the antimicrobial activity with storage duration. This study provides novel insights into the stability of ozonated oils, offering valuable perspectives for their application in the food industry, especially using pomace olive oil, a key by-product in olive oil production.

    Excitation-emission matrix spectroscopy coupled with chemometrics for monitoring ozonation of olive oil and olive pomace oil

    The effects of ozonation on the Total Polyphenol Content (TPC) of olive oils remain largely unexplored, despite the significant role that polyphenols play in enhancing the health benefits and quality of these oils. Understanding how ozone treatment impacts phenolic compounds is vital, especially considering the documented negative effects of thermal and photochemical oxidation on TPC. The aim of this study was to explore the use of fluorescence spectroscopy combined with chemometrics to develop multivariate models for monitoring the effects of ozonation on TPC and key physicochemical parameters such as the peroxide index (PI), acidity index (AI), iodine value (IV) and viscosity (V) in both, virgin and pomace olive oils. Parallel factor analysis and principal component analysis of fluorescence excitation¿emission matrices (EEMs) of ozonated olive oils revealed that as the ozonation process progressed, TPC and fluorescence emission decreased. And, at the same time, ozonation increased the values of oxidation indicators such as PI, AI, viscosity and intensity of the Rayleigh scattering signal. PLS models based on analysis of unfolded EEMs exhibited good predictive performance for PI (R2 = 0.822; RPD > 2.5), and moderate for TPC and V (R2 = 0.792 and 0.753; RPD > 2). In summary, we demonstrated the feasibility of EEM spectroscopy for monitoring the ozonation process. The use of this method can ease the characterization of ozonated olive oils and, additionally, make the analysis more sustainable.

    Predicting the spatial distribution of reducing sugars using near-infrared hyperspectral imaging and chemometrics: a study in multiple potato genotypes

    The determination of reducing sugars in potatoes is important due to their impact on product quality during industrial processing. The significant variability of these compounds between genotypes presents a challenge to the development of accurate predictive models. This study evaluated the potential of near-infrared hyperspectral imaging (NIR-HSI) for the prediction of reducing sugars in potatoes. For this, a wide range of genotypes (n=92) from two seasons (2020-2021) was selected. Partial Least Squares Regression (PLSR) and Support Vector Machine Regression (SVMR) methods were used to build the prediction models. Furthermore, interval PLS (iPLS), recursive weighted PLS (rPLS), Genetic Algorithm (GA) and Competitive Adaptive Reweighted Sampling (CARS) were used for relevant wavelength identification to develop less computationally complex models. The best full spectrum model (SNV-PLSR) achieved coefficient of determination and root mean square error values of 0.88 and 0.053% and 0.86 and 0.057%, for calibration and external validation, respectively. Variable selection algorithms successfully reduced the dimensionality of the data without compromising the performance of the models. Robust predicted models were built with only 2.65% (CARS-PLSR) and 3.57% (iPLS-SVMR) of the total wavelengths. Finally, a pixel-wise prediction was performed on the validation set and chemical images were built to visualise the spatial distribution of reducing sugars. This study demonstrated that NIR-HSI is a feasible technique for predicting reducing sugars in several potato genotypes.

    Desde que en 1995 se promulgó la Ley 31/1995 (BOE nº269/1995) de Prevención de Riesgos Laborales se ha observado una disminución importante de la siniestralidad laboral en todos los sectores. Sin embargo, en el sector agrario esta disminución no ha sido del calado de otros sectores y, por ejemplo, los índices de mortalidad prácticamente se mantienen en el tiempo. Tal es así, que el sector agrario ha sido calificado por el Observatorio Estatal de Condiciones de Trabajo (OECT) como prioritario para el desarrollo de políticas preventivas eficientes que permitan reducir la siniestralidad en el sector en base al índice de accidentes graves y mortales ajustado por la población afiliada.
