Publication Open Access Entrepreneurial innovativeness: when too little or too much agglomeration hurts(Elsevier, 2023) Pindado Tapia, Emilio; Sánchez García, Mercedes; García Martínez, Marian; Enpresen Kudeaketa; Institute on Innovation and Sustainable Development in Food Chain - ISFOOD; Gestión de EmpresasThis study sheds light on the relationship between agglomeration, entrepreneurs' internal resources and capabilities, and new ventures' innovativeness using a multilevel framework. We argue that the urban agglomeration of economic agents within a country has an inverted U-shaped relationship with new ventures' innovativeness, suggesting that both insufficient and excessive agglomeration might be detrimental to entrepreneurial innovativeness. Additionally, we perform interactions between individual level factors and urban agglomeration to examine the differential effects of entrepreneurs' internal resources and capabilities. Results confirm our hypothesising that the geographical concentration of economic agents within a country exerts an inverted Ushaped influence on new ventures' innovativeness. Furthermore, we find that entrepreneurs with higher levels of education or prior entrepreneurial experience are better equipped to benefit from agglomeration and to mitigate its negative effects; in contrast, at low levels of agglomeration, entrepreneurs with lower resources exhibit increasing marginal returns. Entrepreneurs in contact with other entrepreneurs are better positioned to deal with agglomeration externalities although their benefits and drawbacks are intensified. Nevertheless, it is relevant to emphasize the negative impacts of this activity identified in Economics as negative externalities. At the European Union, road transportation is the main cause of the air pollution impact on the population. Thus, this study explores the factors that influence the willingness to pay (WTP) on behalf of the citizens to reduce air pollution generated by road transport. In doing so, we propose two fundamental theoretical frameworks to explain individual behavior towards the environment actions: the Theory of Planned Behavior (TPB) and the Value-Belief-Norm (VBN) models. A questionnaire survey with 1,612 residents was used to collect data in 65 localities located in the Spanish Pyrenees and performing a statistical analysis with the resulting data relied on application of Structural Equation Models (SEM). Moreover, the survey results highlight the importance of psychological aspects as predictors of proenvironmental behaviors. Results indicate that growth orientation is largely self-determined. The knowledge base of the new entrants, their social ties with entrepreneurs, together with the capabilities to identify and exploit opportunities, as well as those to effectively offer new products, trigger these growth-oriented ventures. Industry contexts also influence them, as those operating in less agriculturally competitive countries have a greater probability of becoming growth-oriented, suggesting convergence forces. Lastly, results reveal that competitiveness positively moderates the relationship between product innovation capabilities and growth orientation.Publication Open Access The impact of the territorial gradient and the irrigation water price on agricultural production along the first phase of the Navarra Canal in Spain(Elsevier, 2023) Martínez Aldaya, Maite; Gutiérrez-Martín, Carlos; Espinosa-Tasón, Jaime; Ederra, Idoia; Sánchez García, Mercedes; Gestión de Empresas; Enpresen Kudeaketa; Institute on Innovation and Sustainable Development in Food Chain - ISFOODWater is an issue in Spain, where it is generally scarce, and its availability is highly variable in different areas and times, particularly in agriculture, the main water consumer. Water pricing is one of the policy instruments used to control irrigation water use. However, specific contextual studies to provide greater details, understand farmers’ behaviour, and clarify the consequences and effectiveness of water pricing are generally unavailable. Here, we developed and applied a simulation model based on two Positive Mathematical Programming (PMP) methods, which makes the model more robust, to better understand and quantify the impact of the north–south territorial gradient on farmers’ decisions concerning agricultural water pricing in the first phase of the Navarra Canal irrigation area in northern Spain. This model couples water use with rainfed and irrigated areas, farmer revenue, and labour. The results show spatial north–south variability in the 50 km of the first phase of the Navarra Canal. In northern and middle regions, when water prices are increased, rainfed crops are chosen to substitute irrigated crops due to abundant rainfall and a lack of the appropriate climate and soil to grow other crops. Meanwhile, southern regions depend mainly on irrigation and are more sensitive to water price increases. These very productive southern regions also show larger gross margins and paid labour values. In every canal region, with an increase of 0.1 EUR/m3 in the water price, economic losses can reach up to 400 EUR/ha. Meanwhile, an increase in water prices over 0 EUR/m3 leads to decreased water use per hectare.Publication Open Access International entrepreneurship in Africa: the roles of institutional voids, entrepreneurial networks and gender(Elsevier, 2023) Pindado Tapia, Emilio; Alarcón Lorenzo, Silverio; Sánchez García, Mercedes; García Martínez, Marian; Gestión de Empresas; Enpresen Kudeaketa; Institute on Innovation and Sustainable Development in Food Chain - ISFOODThis paper explored how institutional voids (market-unfriendly regulations and corruption) in the home country affect the internationalization degree of early-stage entrepreneurs in Africa. We examined the contingent roles of entrepreneurial networks and gender in the relationship between these institutional voids and entrepreneurs’ internationalization degree. We used 2003–2017 GEM data from 17 African countries and applied multilevel-ordered logistic models. Our analysis revealed that market-unfriendly regulations have a negative effect on the entrepreneurs’ internationalization degree and that corruption, in line with the escapism view, has a positive effect. Our results indicated that entrepreneurs engage in networking bricolage to internationalize their ventures and overcome context limitations. They also suggested that the internationalization degree of female entrepreneurs increases in market-unfriendly regulatory environments. Finally, our results showed that the ‘escapism effect’ of corruption is greater for female entrepreneurs; however, for female entrepreneurs with medium and large internationalization degrees, this context imposes additional constraints on them.Publication Open Access The interplay between health claims and sensory attributes in determining consumers’ purchase intentions for extra virgin olive oil(Elsevier, 2023) Bou Fakhreddine, Lara; Sánchez García, Mercedes; Gestión de Empresas; Enpresen Kudeaketa; Institute on Innovation and Sustainable Development in Food Chain - ISFOOD; Universidad Pública de Navarra / Nafarroako Unibertsitate PublikoaA large body of literature has supported the idea that both food-intrinsic sensory attributes (e.g., taste, aroma, etc.) and food-extrinsic attributes (e.g., origin, health claims etc.) play a crucial role in consumers’ purchase intentions. However, it is still uncertain how the presence of health claims in the era of high prevalence of diseases and viruses (e.g., the COVID-19 pandemic) might impact sensory attributes, and therefore shape consumers’ purchase intentions. Thus, the aim of the study is to (i) investigate the impact of health claims presented to the consumers along with the sensory attributes on their purchasing intentions, and (ii) examine to what extent sensory attributes mediate the relationship between the presence of health claims and consumers’ purchasing intentions. For that purpose, sensory analysis of a healthy food product (extra virgin olive oil (EVOO)) was conducted to examine consumers’ interest in health claims in two scenarios: an informed scenario without health claims (n = 102) and an informed scenario with health claims (n = 105). The findings from a Structural Equation Model using STATA software suggest that the presence of health claims positively affects purchase intentions for EVOO. The sensory attributes taste and aftertaste partially mediate the relationship between the presence of health claims and consumers’ purchasing intentions. Furthermore, consumers rated the sensory attributes higher in the presence of health claims. Therefore, the food industry should focus on ways to improve consumers’ sensory and health perspectives by producing not only healthier food products with health claims but also tastier products than the ones available in the market. Moreover, food companies and marketers can make health claims more effective by targeting consumers’ preferences and developing marketing campaigns using claims that are essential for promoting extra-virgin olive oil.Publication Open Access New trends in the global digital transformation process of the agri-food sector: an exploratory study based on Twitter(Elsevier, 2022) Ancín Rípodas, María; Pindado Tapia, Emilio; Sánchez García, Mercedes; Enpresen Kudeaketa; Institute on Innovation and Sustainable Development in Food Chain - ISFOOD; Gestión de EmpresasCONTEXT: The agri-food system is undergoing pervasive changes in business models, facilitated by the use of digital technologies. Although today it is almost inevitable for any business to adopt some level of digital transformation to strengthen their competitiveness, this transition in the agri-food sector could be more complex, given its characteristics. OBJECTIVE: The aim of the study is to analyse worldwide the perceptions of new digital technologies in the agri-food sector expressed within social media platforms, identifying the differences that may exist between them regarding its objectives and social acceptance. METHODS: This paper examines the information regarding digital transformation process in the agri-food sector disseminated worldwide on Twitter. For that purpose, Twitter API is used to gather tweets and descriptive and content analyses, including a sentiment analysis, are performed using R and MAXQDA software. RESULTS AND CONCLUSIONS: We found that the digitalization of the agri-food sector is broadly discussed within Twitter. Different actors participate in these information flows, being companies and digital solution providers the most active users and academics and governmental institutions the most visible. Artificial Intelligence was the most mentioned technology, that together with the Internet of Things, Big Data, Machine Learning, and Cloud Computing, was related to improving production efficiencies, crop yield, or cost reduction. In the case of Blockchain Technology, it was closer to food supply chain actors, such as distribution companies and marketers. However, all these technologies are connected to the concept of sustainability. The sentiment analysis showed a generally positive tone, indicating social acceptance regarding the starting phase of the adoption of these technologies. The study also identified differences among countries, pointing to a stronger level of engagement with these technologies in developed regions. Moreover, the COVID-19 pandemic was seen as a chance to boost the digital transformation in the sector all over the world. SIGNIFICANCE: Our results demonstrate that data harvested from Twitter provide useful insight into perceptions of digital transformation and different digital technologies in the agri-food value chain across different countries. Innovation can offer a strategy to address sustainable development challenges in all areas of society. Traditionally, the agri-food sector has had low levels of innovation and research and development (R&D). Despite its negative environmental effects, its value for society is unquestionable. Therefore, the agri-food sector must not lag behind other sectors in embracing the technological progress that contributes to sustainable development. The scientific literature contains studies of eco-innovation drivers and barriers. Nevertheless, research on low-technology sectors such as the agri-food sector is scarce. To address this research gap, this paper identifies the internal and external factors that are necessary for in-firm eco-innovation and whose absence can constrain or block eco-innovation development. Data were gathered from Spanish agriculture and industrial agri-food firms in 2022 based on primary statistical information collected in a 2022 survey to obtain data on their activity in the period 2017-2021. Necessary condition analysis (NCA) reveals three main findings: (i) internal factors are more relevant than external factors, (ii) the type of firm and the degree of eco-innovation development affect the importance of internal and external factors, and (iii) agricultural and industrial agri-food firms prioritize different stages of eco-innovation development because of the higher complexity and technological progress of industrial firms. These results highlight eco-innovation as a key strategy to enhance the competitiveness and sustainability of the sector. By prioritizing internal factors and fostering eco-innovation through environmental training, green relationships, and support networks, companies can progress toward more sustainable and technologically advanced practices, thus contributing to the overall sustainable development of the sector. This underscores the importance of policies that promote training, investment in R&D, environmental and fiscal regulation, and collaboration to drive eco-innovation and sustainability in the agri-food sector.Publication Open Access What dimensions of risk perception are associated with avoidance of buying processed foods with warning labels?(MDPI, 2020) Adasme Berríos, Cristian; Aliaga Ortega, Luis; Schnettler, Berta; Sánchez García, Mercedes; Pinochet, Consuelo; Enpresen Kudeaketa; Institute on Innovation and Sustainable Development in Food Chain - ISFOOD; Gestión de EmpresasNutritional Warning Labels (NWLs) inform consumers about processed foods that exceed critical nutrient levels activating the risk perception in consumers. However, this information is limited. The objective was to identify the dimensions of risk perception and to study their associations with avoidance of buying processed foods with warning labels. A survey was applied to 807 decision-makers who choose what to eat at home. The four dimensions of risk perception (performance, financial, physical, and psychological) were identified through exploratory factor analysis. Through a multiple regression model, we determined the dimensions of risk perception and sociodemographic variables that affect the intention to avoid buying processed foods with NWLs. The results show that the performance risk, physical risk, and psychological risk positively affect the intention of avoiding processed foods with NWLs. In addition, the female gender considers NWLs to purchase foods. Nevertheless, the high frequency of consumption and belonging to a lower-income socioeconomic group are barriers to the use of NWLs. In conclusion, NWLs help people to choose processed food that does not impact negatively their food expectations, as well as their mental and physical health. However, health authorities must invest in nutrition education. Specifically, in groups who pay less attention to NWLs. Such groups include people with high daily consumption of processed foods, males, and low-income socioeconomic groups.
